I see nothing on the list that would be unnecessary, but also nothing you shouldn't be able to do yourself if you're one notch above a novice DIY'er.
It is a major service that requires changing the plugs, fuel and air filters, coolant, serpentine belt, oil/filter, auto-tranny fluid/filter, and a dozen or so routine checks (like if the exhaust is about to fall off, etc).
The only one of these that might tax a novice DIY'er is the serpentine belt replacement, which is not easy or fun and is best done with the help of another person, IMO. Check Quasi's site for a run-down on this procedure and others.
Some caveats:
-Use only NGK plugs, as specified in your manual
-Dayton sperpentine belts (an NGK company) are usually available at Pep Boys and are very inexpensive ($16 if I recall).
-Saab brand air filters should be competitively priced, in contrast to most other parts.
-If you have a manual tranny, you might consider changing the oil, but use only 10w30 fossil (i.e. not synthetic) fossil oil. It is not on the scheduled maintenance list, however. You can change to Saab brand synthetic fluid, but there is a ritual involved in the change, so unless you have a good reason to make this change either don't do anything or use fossil oil.
If you want to tackle all or part of the job yourself and have any doubts about any of the procedures, you can write here for help--or, just pay the dealer several hundred dollars to to the job.
As for changing to synthetic at 125k miles, do a search on "synthetic oil" and read the many threads on this subject, including some very recent ones. After that many miles using fossil oil, certainly quite a bit of sludge and varish will have accumulated, and it would be prudent to either run a cleaning oil (Amsoil or BG) through the system following directions precisely, and/or change to synthetic using short intervals (3k miles) at least three times.
