I bought my '96 900S new in '97 (leftover, with leather and moonroof), and bought my '98 9K CSET used in '01 (42K miles). Although both models are auto, I can offer some info to your question.
I went from an '88 900S to the '96 and absolutely loved the extra amount of power it received. Though I felt the look of the C900 was nicer, as well as the "sitting on a couch in your living room" feel of the interior, the NG900 definitely surpassed the C900 in performance, durability, and reliability.
When I went to the 9K (and then gave the 900 to my wife), it was like night and day. The 2 cars are completely different. The 9K is based upon the old-gen Saab's with more refinement, whereas the 900 is based upon the new-gen Saab's which include the 9-3 and 9-5.
The interior of the 900 feels/looks more sporty than the 9K. The handling of the 900 feels more nimble and responsive. It feels like a smaller car, though it's not that much shorter than the 9K (mine is the 4-door). You sit much lower in the 900, even when you use the height adjustment lever. I installed a wood dash kit in the 900 and like the way it looks better than in the 9K. There are more Saab options and accessories for the 900 since some of the earlier 9-3 stuff fits it, whereas the 9k is limited to what they put out in '98 and previous. The radio is speed-sensitive, so it gets louder as you drive faster. The a/c turns off when you are at WOT to give you more power. The a/t has 3 driving modes (Winter/Sport/Normal). It has a GLOVEBOX!
The 9K elicits a much more impressive look exterior-wise. It is classy, luxurious, prestigious, and much more European-looking than the 900. Catching the 9K from the right angle also emits a sense of "wild-animal" power waiting to be unleashed. It absorbs the road-bumps much better while still maintaining good road-feel and handling. It has more interior room. One thing to mention here is that the NG900 lost some space in the luggage area as compared to the C900, and my C900 could hold as much as my 9K. The headlights are brighter on the 9K.
I can't say much on the power difference since my 900 is n/a with 150 hp, whereas my 9K is turbo with 200 hp.
Also, since you are going from a '93 to a '96/'97 MY Saab, there are many things that you don't have on your car that the NG900 has which my 9K also has (rear fog light, keyless entry, etc.--I'm sure there are other things, I just don't know too much about pre '97 9K's), so basically you'll be getting a lot of new-gen stuff just because of the MY.
I am in the process of selling my 900S, and posted a very similar question like yours to this BB, as well as the 900 BB, back in Jan. and everyone told me I'd be crazy to stick with the 900 and sell the 9K, even though I installed all the SE options into my S, minus the turbo engine. I also got to drive an '02 9-3, and it felt the same as my 900, and not as powerful as my 9K (which is true since it does have less power).
Hopefully this didn't confuse you, but comparing the two cars is like apples to oranges--they're completely different models. I have likes/dislikes for both of them. You also have to take into consideration the fact that you are coming from a '93.
