This evening put things back together enough to drive around the block with the headliner still out, and I would say the sunroof cable tubes are definitely the source of the noise I would hear. There are two tubes per side and both run unsupported near the sunroof channel. I could see them vibrating when I was lugging the engine, and I could easily imagine them hitting the metal when pushed up by the headliner pressboard. I wrapped the tubes with foam where it looked like they needed it and held the foam in place with duct tape. I put the headliner back up, but haven't had a chance to check it. I sure it will fix the problem.
Oh, and I was wrong. The tubes are made of copper, not brass as I guessed.
