The knock sensor is the one with the 2 wires that you disconnected. I would think that unplugging this should prevent you from going above base boost. I cannot imagine how unplugging it would not make some major change in performance.
The only thing I can think of that would explain you getting above base boost with the knock sensor disconnected is that your APC valve is stuck in a partially closed position, basically preventing the computer from limiting you to base boost. I bet Anders knows what is supposed to happen when you unplug the knock sensor.
What did the inside of the electrical connector look like? I took mine off (causing some blood loss) and it was caked with crud. I cleaned it and packed it with dialectric grease. It didn't make any difference on my car because my APC valve was stuck.
