In your shoes, I would have exactly the same plan you have devised. The one possible exception is that I would try to figure out if the valves are bent before removing the head. I am not sure how to do this, blissfully not having experience in this area.
Replacing the head is not easy, but neither is an oil change the first time you do it. You will learn a lot more doing the head yourself than learning how to swap junkyard motors. Also, you only have 68K on yours. I don't see where a higher mileage motor is better, and I really don't foresee finding one with fewer miles. So, if you are a fool, at least you are not alone.
