Can't speak to anything else, but I am currently in the process of recovering the door panel inserts on my '88 9kt. It isn't terrible, but it's a fair amount of work. You do need to remove the door panels, as the inserts are attached from behind. The are inserted into the panel with integrated plastic studs (for lack of a better term) and retained with circular press-on trim clips. You need to remove the trim clips, remove the pull handle (only at the top), then withdraw the insert. The inserts are plastic pieces, and on my '88 have grown quite brittle so care should be excercised. Also, be careful not to damage the door panel vinyl when futzing with the handle - it's easy to deform.
I am recovering mine with the same material I used for the headliner - it's a medium mocha color, matches the trim quite well. I probably should have used something else, something more durable, but it was an experiment and I can always redo it later... :) In the meantime, it's better than the old fabric flapping in the breeze.
I had to destroy the circular trim clips during removal, but you can buy replacements at Pep Boys or wherever... just pick up some 5/16" clips from the Help! line of products that all the chain stores seem to carry. They're more or less universal.
Oh, should ask - what color is your interior? You shouldn't have much problem finding most color interior dash tops at a junkyard... They seem to be pretty cheap - well under $100, and far more common than good 900 dashes! I have a perfect grey one in my garage if it's of any help. I think it should be the same on a '91, unless you've got the sensor in the center of yours as later cars do.
