I echo Trobinson9kt. There is no need to worry about this. When you do an oil change, all you're doing is draining the oil out of the sump. When the car is sitting, engine off, there is the same amount of oil at the turbo bearings if the sump is full or empty. And the turbo isn't dry. It has the same oil film on the bearings after an oil change as it would after letting the car sit for an hour. Draining the oil from the sump doesn't magically suck all the oil from every surface on the engine. It would make for a better oil change if it did.
Secondly, the turbo spins due to exhaust gas flow. When you're cranking the engine, the exhaust flow is minimal. If it gets the turbo to spin a few RPM, it's a lot. Nothing compared to the tens of thousands of RPM at full boost.
Lastly, there is always an oil film on the bearings. The most important task of the oil flow is to remove heat from the bearings. That's only going to happen after the engine has been running for quite a bit.
