Seriously what your probably hearing is the rear doors de-mister fans. The kids thing comes from the possibility something got dropped in there. The rear de-misters are the second button down ( under the rear window and above the fan speed).The rear doof fans speed are dependant on the main fans speed unless they are manually selected, then they go full on.
If they annoy you totally, you may want to consider unplugging them.
As to setting the "default", get the ACC to do what you want, then press "DEF" and "VENT" at the same time. This will set what it does on startup. To cancel, press "AUTO" & "OFF" at the same time. This may not help much as the rear door fans can only be set to the opposite of auto (as can the rear defrost and recirc) at the time of programming.
