Routine Maintenance ???? (kinda long) HELP!

My plan is to do a little routine maintenance (specifically the 185K service)
the previous owner neglected to have the 155K service so the coolant spent an extra year before I'm flushing it.
Also on the list:
1.change drive belt, check tensioner.
What exactly am I looking for on the tensioner, should I just replace it as preventive maintenance?
2. Flush and fill coolant (no big deal I'm planning to have it done at a shop with the machine that does it.)
3. Flush and fill brake fluid (debating whether or not to do this myself)
4. Valve cover gasket, it's a little leaky now. Also while I have the valve cover off I was going to replace the timing chain guide and need to know what to look for or if I should replace that too (175K miles) also what about valve seats and other stuff.
5. Change the fuel filter, I'm not messing with gas, my shop will get to do this one.
I may have left things out, but these are the biggies.
Please help me out if you can.
