Of course, checking to make sure the temperature sender is correct is a good idea. If it's lying to you, you're chasing a problem that doesn't exist.
I like using a cooler thermostat AND radiator fan thermoswitch. The stock engine thermostat is 89C, you can use the 82C. That's nice, but it's only half the battle. Townsend sells a 82C thermoswitch for the radiator. Some folks have used a similar VW unit.
I can understand, to a point, triggering the radiator fan off engine temp. But only to a point. The radiator fan cools off the radiator. Unless the thermostat is open, that does little good. Most of the time it will help, because engine temperature is a decent predictor of radiator temp.
I would do three things 1&2 are using 82C thermostat and thermoswitch. #3 is to make sure the engine is running right. Lean running will lead to higher operating temps.
