As Gene said, the thermostat is under a metal dome on the back of the engine, by the transmission side. The dome bolts right to the engine block with two bolts. Underneath the dome is the thermostat, which almost looks like a child's gyroscope.
I'm not sure what you found, but I expect it's a temperature sensor. Does it have a wire coming off? If so, it's NOT the thermostat.
