How Often do I REALLY need to change the oil?

I have an '89 9000, which runds like a charm. I drive 550 Miles a week, 85% of which are highway miles.
How often should I have the oil and filter changed? I have been doing it every 3500 miles, but am wondering if I can safely push that to 4000 or 5000.
I know the mauaul says 7500 miles...but given the age of the car, that seems a bit much, no?
