O2 sensor - whats going on - please help

I've been trying to solve a lean-running problem for a while. I replaced the O2 sensor 1 month ago. No change even after putting a lot of miles on the car. The plugs are still white - not the normal tan coloration. I began to suspect the AMM. The car is a 88 9kt, so the AMM has the adjustable resistance.
Yesterday, I finally got an analog multimeter and connected it the sensor when the car was running. The voltage was fluctuating from 0.1 to 0.9 - almost perfect. I checked it again a couple of minutes later and now the sensor has stopped the fluctuation!! Its at a constant 0.8 at idle. Drops lower when I accelerate and decelerate - but immediately climbs back up to 0.8 and stays there. No fluctuation.
Have I messed up the sensor? In 1 month?? How did this happen? Should I not be connecting/disconnecting multimeter leads with the car running?

PS - I used the ground on the battery for the measurement.
