The correct size bolt will be M8x1.25 which is a coarse-pitch metric bolt. The length is hard to figure without looking at the connections, but figure 50mm or 65mm. It is not practical to assemble the pieces and then put them on the car. If you are getting the Starla (Walker) system that is the OE type exhaust, it is relatively easy to put it on one piece at a time. Don't forget to get new rubber hangers. You need two at the center mufler and two at the rear muffler.
A word of advice. Start hitting the catalytic converter bolts with PB Blaster or Liquid Wrench now. For the joint above the rear axle, I usually cut the pipe next to the joint with a reciprocating saw using a metal blade. It takes about 30 seconds.
