It's been a few days since I posted, so let me update ya'll further.
The day after the original post, I drove to work. ~15-20 minutes all highway, no real boosting just cruising at speed. All the way there the temp is a little below 9 o'clock (normal). Just before I got to work it spiked (but not as high as before) So I pop the heat on and it holds steady/drops a touch. On the way home from work I TRIED TO get it hot, no dice, it ran a little above 9 0'clock the whole way home. WTF?
The same thing happened yesterday, ran hot just before I get to work, cool on the way home, even with me winding out every gear at full boost (maybe not 5th) still wouldn't go much higher than 9 0'clock.
Today it went up when I was in stop and go (normal) but never super high and the fan kicked on. Coolant level is steady (hasn't leaked since I replaced the heater core)
So basically I know the radiator and water pump is ok, as the car doesn't overheat (or run hot all the time) So I think it's the thermostat being a schizcophrenic once it heats up.
So I plan to replace the thermostat this weekend and the fan switch too. I also need to flush the coolant since it's really old now (which can't be helpful).
Thanks for all the input, TSN keeps me owning a Saab, and keeps me from emptying my wallet.
