A little voltage drop is reasonable, but a big dip is not. The alternator provides all the power for the car, but the battery should provide the same capability as a big capacitor.
If you're seeing a big drop, my guess is that there is a grounding problem. THis could be a bad ground at the battery, or where the battery cable meets the chassis. It could also be a bad ground at the AC compressor. The headlights ground at the front of the chassis, near the AC clutch ground. Make sure those grounds are correct and clean.
