oil cooler thermostat

can the thermostat be replaced, or am I better off getting a new/used oil cooler for my 1988 9000T?
I've been getting high oil temps over the last several months, as high as 200 225 or so with ambient temps only in the 40's F. 245-250 once last summer at 35 C ambient under heavy boost up a long mountain pass.
I use to have the OEM Saab VDO (fibre optic needle) gauge plumbed from the factory. THat was stolen last year (along with all other gauges), so I threw in a Phantom Autometer gauge, using hte same sending wire that goes to the oil plug as the old Saab gauge. I'm not sure if the new gauge is the culprit for the high readings (different resistance than Autometer plug sender maybe?).,,,,,,as with hte Saab agauge I would just get around 70-90C atthis time of year depending on my driving.
thougths? cooler shot? oil thermostat? Nothing is sludged as it has had full synthetic for nearly 15 years!
