I just re-did my head gasket. It is the second one on a 9000. I just got a head gasket kit. It has the intake and exhaust and head and valve cover gaskets. It also has the oil tube fittings and valve guide seals. I would say you would want to take your head to the shop and have them install the valve seals. You will also probably find that one or more of the exhaust manifold bolts are broken, or will break when you remove it. If you don't have the manual, e-mail me and I can give you the basic instructions.
I don't think it is necessary to replace the timing chain, etc. Some will differ with me, but I have had two 9000's over 200k and no timing chain problems. But, if you are willing to spend the money, doing it when you replace the head makes sense. You will also want an o-ring gasket for the distributor and an thermostat and gasket. You will probably also want to replace some hoses or wiring that you may find to be cracked or hard. If you really want to make sure you have good performance, you can have your injectors cleaned as they will be out. Have plenty of carb cleaner and engine cleaner as you will want to clean things as you take them out. Be careful on the bolts holding the compressor in as they are torx and can easily strip. I replaced them with hex head bolts. You will also need a torque wrench if you don't have one.
Of course you can replace the turbo gaskets since it will be out of the car. I did not this time, but did on the last car I worked on.
