As the others have said, it could be the O2 sensor. Stick a voltmeter on the output lead of the O2 sensor, with return to ground. You should see a voltage swinging between 0.2 and 0.9 volts, but given your symptoms, I expect the O2 sensor signal will be stuck at rich (0.9). IF the sensor is stuck at 0.2 volts (lean), then you know the sensor is bad.

The Check Engine light is probably from the O2 sensor being stuck either rich or lean. If the sensor says lean, it's bad. If it says rich, it's telling the truth. But the CEL doesn't know which.

When the airflow meter (AMM) was changed, was it adjusted? In some years (what Fuel Injection system do you have?) it was adjustable. You adjust it to get the fuel mixture right. This couldn't have been done, because I'll bet your O2 sensor is stuck on rich. If the AMM is commanding too much fuel, it'll be rich. The AMM sets 100% of the fuel flow; the O2 sensor only 25%.

However, I'll bet you've got a different issue. It sounds like all the plugs are rich, so the first thing I'd check is the Fuel Pressure Regulator. If it's running at too high a pressure, you'll get too much fuel. Also check the vacuum line from the FPR to the intake. If there is fuel wetness in the hose, it could be due to a ruptured FPR diaphram, which would dump fuel into the intake manifold.
