I just finished the same procedure on my car ('93 Aero). I had the head checked for flatness to make sure it hadn't warped. (It hadn't). I still had it machined though, because the head gasket had put slight gouges in it where the gasket "bit" the surface with the metal sealing ring. I think it's a good idea to have it machined flat since you have it out of the car. See what other people have to say.
I sanded my engine block to prep it for the new gasket. I started w/ 150 grit sand paper on a flat block, and then went to (I think it was) 400+/-, although I don't think that the higher grit is even necessary on the block.
My cylinders were dark (for the most part anyway. . . the first cylinder was the one that had water seeping into it, and I suspect that the spark plug was fouled the last few times I drove the car, so it looked different), and my valves were a light brick color (intake valves). My gasket didn't stick to anything though, and my head came off really easily. That might just be a difference in age/mileage/climate whatever.
