To replace the thermostat, you need to drain the system down a little. There are a few ways to do this. One is to open the valve at the bottom of the radiator. This works if the valve is OK. Usually they aren't. The other way is just to pull the cover off the thermostat and let stuff splash out. Very messy, and you'll get a lot of coolant smell as it burns off the engine and exhaust for the next two weeks.
What I do is get a cheap aftermarket windshield washer pump. I stick some hose on the input and output, and attach clip leads to the wires. Stick the input side down into the coolant reservoir, and clip it onto the battery - drain the reservoir into a jar. Then remove the reservoir, and stick the pump hose into the fat hose under the reservoir. Drain it down about 5 inches. That'll do.
The thermostat is hard to get to. Make your life easier - pull some hoses off. Don't try and snake your hands around too much. I like using some rope to hold the hoses back to give you space. On some years the Fuel Pressure Regulator is bolted to the top of the thermostat housing. Unbolt it. It's just easier removing stuff in your way. Getting to the thermostat housing bolts can be tough - a 'wobble' bit helps.
When you put the new thermostat in, make sure THE LITTLE HOLE IS UP. That allows the system to bleed air. Make sure you put it in right. Clean the thermostat cover surfaces to get good contact and no leaks.
