Once you have the capability to see something, you then end up looking at it all the time. Most of us drive around with some white gunk in the PVC system, but since we don't inspect it all the time, and the tubing is opaque, we're unworried. It's just like the EDU voltage. Most of the time it doesn't matter a whit if the charging voltage is 13.2 or 13.5 volts, but since folks can see it, it's something to obsess over.
I'm not saying that there isn't a moisture problem in your car. However, since moisture in the oil is normal, defining a 'problem' level is, well, a problem. Most people don't look, so it's tough to define a 'bad' threshold.
I'd clean up the coolant leaks on the outside and monitor the coolant levels. Pull the dipstick on a cold engine, and see if it looks gunked. Check under the cap of the dipstick - is the underside of the cap a creamy white?
At a minimum, make sure that the PVC valve is truly one-way, and that air can't go into the valve cover. Make sure the rubber seal on the underside of the dipstick seals well. If either one of those is shot, you'll pull cold, moist air into the engine on shutdown. That won't help matters.
