Arghhhh........Stupid cowling

OK,
Finally got into getting my new-to-me 98 CSE up to snuff. Got it up on stands, wheels off, and started removing bolts for the plastic cowling under the engine (1 center piece, 1 on each side). Almost all the nuts on the back side were rusted solid so when you turn the bolt, the nusts just spin. Finally wound up prying plastic back enough to get vice grips on nusts nad brute force them off. Since I plan on doing engine work on a regular basis (hopefully all of it planned/premeditated :) ), how can I prevent this from happening in the future?
Stainless bolts and nuts come to mind, but I need something that will lock itself on the back side to allow removal of the bolts.
Anyone have some creative solutions?

BTW - once the cowling was off, everything else was pretty easy. Replaced t-stat (bit of a pain getting t-body and aic off), all radiator hoses (except heater hoses - they looked OK and seemed like it would be a big pain due to the cramped quarters in the aquarium), new plugs, air filter, cabin filter, pcv valve and gasket, hooter valve replacement. Up tonight is steering fluid replacement, brake bleeding, auto tranny flush/filter change, and tensioner/pulley/belt replacement. After that I should be golden for a while!
