"back defogger always on" As david mentioned, you can program any desired pre set settings. You can also just clear what might be in there. It's all in the manual.
"don't we want outside air" For summer, it will start with no recirc and then switch to recirc. And it may even switch back and forth depending on further climate conditions. I typically (again in summer) use recirc figuring it is easier for the A/C to cool down already cool/dehumidified air than to process the hot summer air. Otherwise, I just select recirc if it's stinky outside!
"fan speed too low" In both of my auto climate cars (one not Saab) I find if the vents are directed into the car instead of at me, the auto temp works well. You may try to direct the vents right at you so that you are a bit cooler than the "set" temp. YMMV
