The pedal pusher test only checks the accumulator. You know the pump is running by the sound.
After the car has been sitting overnight, the fluid level in the reservoir (smoky plastic container) should be well ABOVE the FULL level. Starting the car, the level should drop to FULL. When you pulled over and the level wasn't changing, was the level at FULL? If so, that's probably not necessarily bad. Although, lights coming on is never good.
Again, this is a tough one. There could be a lot going on here. There are three pressure levels- one at 100 bar - below that you get lights. One at 140 bar - below that, the pump runs. The last one is 180 bar - that shuts off the ABS pump. If the pressure switch fails, or becomes intermittent, it could think that the pressure is low - this would cause the pump to run AND the lights to come on, yet there would be no other problems. It should shut off at 180 bar.
You've done the flush. Keep any eye on it, and be extra careful on hot days. I've twice had the lights come on on a hot day after being stuck in stop and go traffic. That's doubly bad - lots of brake applications means the pump runs a lot, and gets very hot. And minimal airflow means prolonged hot underhood temps. A cool-off handled it, and I haven't seen it again for a few years. Let's hope that's the same for you.
