It's not dependent on outside temp, but can go up to almost red, keep there for a minute or so, then suddenly drop down in a second.

Everything that can be a problem was changed (excluding only pump). Then I was so confused, tat I bought thermometer and measured engine, coolant and oil temp. Funny, but when gauge shows almost red, engine (near temp. sensor) was no more then 90C and water about 85-89 with oil in oil radiator less than 70C.

My only suggestion is that temp sensor is biased by the pressure in cooling system, which can drop suddenly when valve in the filler cup gets open. It's proved by fact, that this weird behavior gets more frequent if I fill reservoir up to MAX or more.
