My car (88 9000 turbo) does this too, although it only started recently.
AMM stands for Air Mass Meter, and it measures air density to adjust the fuel/air mix into the combustion chamber (please correct me if I am wrong!). This means that theoretically, you should be able to drive your car in San Diego and Denver without any adjustments to the airflow. It's located on the pipe that goes from the throttle body down to the air dam/air filter. The pipe is actually aluminum mated into flexible black rubber elbows. The AMM has a rectangular box on top of it, with an electrical connector plugged in.
A lot of things can cause your rough idle at startup--don't jump immediately to AMM, as it is the most expensive item. Gavin has posted recently about the AIC (or is it IAC?) valve, which is located on top of the intake manifold. I cleaned this out, and it solved the idle, which came back about 2-3 weeks later. I'm thinking my oil leak is actually getting inside the TB and messing stuff up.
Other possibilities could be vacuum lines or air filter.
