As I remember, the sensor on the side of the block (91 08 291)drives the temperature gauge. The sensor tucked under the intake manifold, known as the Engine Temp sensor (93 57 021) is used by the engine control.
So all you would be losing would be the temperature gauge function. The engine control should work just fine. The drawback is that you now have no warning of engine overheat other than the Buy New Engine indications of steam or flame from underhood.
I assume your gas guage is working fine. The Temp gauge is driven from circuitry in the EDU. An EDU problem, including just needing to have the connector re-set, can cause temp gauge problems. I ask about the gas gauge, because it uses the same circuit board.
