The best diagnostic for CV joints is to find an open parking lot, and with the windows rolled down, drive very slowly with the steering wheel cranked all the way over one way. Then try it again the other way. If you hear a rythmic poping related to speed, that's a sign of bad CV joint. Also, visually inspect the CV joint boots. CV joints usually fail if the boots have been ripped and the grease has come out.
As Jim says, just turning the steering wheel and hearing noise isn't a sign of a bad CV joint. A 'click' turning the wheel back and forth is usually the sign that the airbag 'clock' spring is on the way out - expect a SRS light shortly. It would just be one click each way. Otherwise, it could be an interferece in the steering column.
