It's probably not the thermostat. If it were, you'd be having problems all the time, not just when the A/C is on. However, if the thermostat's original, you're way past living on borrowed time.
I second buckmath's comments. First, look in the front of the grill. You'll see a small fan bolted to the radiator. That fan should come on when the AC compressor kicks in, turn off when the compressor is off. If that fan isn't working, that's at least part of your problem.
Is the engine temp going high only when the car is not moving (like stuck in traffic), or does the temp go up when the car is moving down the highway? Does the temp gauge indication jump up instantaneously, or does it creep up over a few minutes?
If the problem only occurs when the car isn't moving, or is moving slowly, then make sure your big radiator fan (on the engine side) of the radiator is coming on.
If it happens at all speeds, it gets trickier. If the gauge jumps up instantaneously, I'd guess it's an electrical issue, and not a real overtemp. The temp gauge is driven by the EDU, and it filters out lots of things, unlike the earlier years. It may change what it shows if the AC is on. Not sure. But it could be a grounding problem. If the temp creeps up over a few minutes, and that happens at all speeds, I'd wonder if the AC is pulling lots of power. You'd notice it as the engine would hiccup when the AC compressor kicked in at idle.
