First off, I recommend stock hydraulic mounts.
As to goals- solid mounts are cheaper, and they last longer. If you're looking to save money, they are the way to go. There will be more vibration. How much more varies from engine to engine. If you're willing to give up some comfort to save money, they are the way to go.
In terms of longevity, motor mounts last a pretty long time. I've seen hydraulic mounts last 80K miles or more. Do you expect to have the car 80K miles from now? Even with hydraulic mounts, you can do the Townsend trick to limit movement, and that will give you long life and less vibration. Probably the biggest killer is oil leaking onto the rubber, so if you're pretty oil-free, the mounts should last a long time.
On manual-tranny cars, stiffer mounts make for slightly better shifting during hard shifts. If you're setting your car up for performance - stiffer shocks, poly bushings, fatter anti-sway bar, and wider tires, then you've already made the decision to give up some comfort for performance. Solid mounts would be a logical part of such an upgrade. But just going to solid mounts and not upgrading the rest of the system will provide little advantage.
I see the major advantage of solid mounts as being price. If you've got a smooth engine, it'll be a good choice. If your engine isn't so smooth, you may not be so happy. I would definately not recommend them if you have an automatic, because vibration at idle may be objectionable.
