Hope all's well with you.
2.5" pipe should allow for a 450 horsepower capability and, if not seeking requirements beyond this, we generally recommend staying with this size for best fit and elimination of unwanted vocals (backfire/backdraw under decelleration). Our dyno testing showed no change between 2.5" to 3" zero restrictive systems but, on most of the modestly updated 9000 2.3T, use of the 3" (compared to 2.5") actually rendered a slight reduction of low end rpm performance (due to what we speculate as a lower exhaust velocity/speed exiting the turbocharger).
In your case, you could easily eliminate the mid muffler and have your exhaust shop install a performance muffler at the rear section. Use of a highly resonated back tip may help reduce backdraw as mentioned above.
