hi nathan, the exast cams are the same between the turbo and the non turbo. I've swapped different intake cams over the years. the NA 2.3L cams FEL like they provide a bit better low end torque and spoolup on my '88 with a big t3 t4 turbo, hover 'drop off' spmewhat at high RPM.
I wouldn't bother getting custom cams until you are basically at the end of the line for mods and looking for 300+hp....in the 2.0L motor.
a 2.3L head is a nice upgrade over the 2.0L. the intake will help somewhat at you mentioned, but there still is a log jam at the runners.
you want to only gasket match the new manifold with the head, to smooth out any possible ridges. if you were to get a 2.3L head you would have to gasket match a little more agressively for the port side.
other than that, and if you have a 2 piece inlet, just put it on and see how it runs!
