Along with pulling the engine, etc., you may have disturbed that connection or broken off the nipple from the bottom of the plastic reservoir that eventually feeds the pump. This is a well-known weak point on the reservoirs. You need to see where the leak is coming from before replacing the hoses, but yes, the high pressure hose could easily be the source, especially if there is no PS fluid below the reservoir.
I preemptively replaced both hoses when I installed a rebuilt rack in my car, but attached the hoses to the rack before installing the rack. I believe that it's possible to replace only the hose(s), you may want to remove the rear half of the left front inner fender if there isn't room to access it from underneath. If you don't line up the hose fitting to the cast aluminum rack properly, it seems easy enough to cross-thread the connection, which will cause major leakage. Be sure to use new O-rings at the ends of the hoses if you replace them. I had new hose installed on the old fittings at a hydraulic shop, they claimed that their material was far superior to OEM.
To change the rack on a manual transmission car, I had to drop the left-side subframe a bit - the shift linkage gets in the way. Your idea of lifting the engine a bit may also provide the same clearance.
