There is a mixed-air sensor you can get to by removing the top of the dash (not difficult). More usual to fail is the cabin air temperature sensor, which is the bull's-eye thing below your heated seat switches. If you get a torch you may be able to see if this is rotating - easier to see when it's not actually turning, because you can see the blades rather than a blur! The fan continues to spin for about half a minute after turning off the ignition.
Sometimes when these fail they sit there twitching rather than spinning. Sometimes they clog with dust and you might revive them by removing the dust. Not expensive to replace.
You can also check that the heat flap is opening/adjusting properly. If you take off the black cover under the windscreen, inside the engine compartment, and look centrally you will see a grey plastic lever with a stiff wire hooked into it. If the lever is broken, it won't operate the flap, which can tend cause haphazard heating. Saab sell a kit for mending this. If the actual wire doesn't move when you alter the temperature settings at the control maybe the stepping motor under the dash is on the blink.
Finally, I'm sure you know to reset the ACC control by pressing the top-left and bottom-right buttons simultaneously and releasing them. The temperature goes to zero and the unit self-tests. If a figure comes up - say 1, 3 or whatever before you get the temp setting back - this is the number of faults and you then need to have the codes read. Details of this test are in your handbook.
