I wonder if it might be worth checking the sender output with a DMM at equilibrium temperature on the different cars to give you some more assurance that it's indeed running hotter, rather than a variation in the gauges. They're not exactly precise instruments, which is why they didn't go to the trouble of adding numbers to the face.
The t-stat is one of the simpler jobs, at least in my 93 NA's. Only thing to watch for is to take care that you get it seated properly in the bore after replacing the housing.
