Starting around '95 or '96, Saab changed the way the temperature gauge reads. The EDU smooths the heck out of the signal, and adjust it for things like engine speed, load, etc. So for a '96, it is quite normal for the temp gauge to read around 7 or 8 o'clock. The gauge doesn't show the variations we expect from the older cars. The temperature is still going up and down, but the gauge doesn't show it. Only if the temperature really goes up does the gauge show it.
If your temp gauge was consistently in the 9;00 range, one of two things comes to mind. The first is that your old thermostat was sticky and causing the engine to run hot. The second is that the temp sensor was reading wrong. Since that temp sensor is near the thermostat, it's possible that you manged to knock the sensor back into reading right when the thermostat was replaced.
With a '96, if the temp gauge gets up off the peg and stays around 7 or 8, that's normal. Really.
