At 75 mph, whether you have a low or a high temp fan thermo switch, or what type of coolant you use, it immaterial. The 75 mph air through the radiator will out-do whatever any radiator fan can provide, and the heat capacity of ethylene glycol is not wildly better than that of water. The purpose of the ethylene glycol is to change the freezing and boiling points of the coolant mixture, as well as lubricating the water pump.
I had these exact same symptoms in my '91 9kt, and the engine ran consistently hot, so that eventually my radiator fan fried. I could get the engine to cool down a bit if I ran the car at 60 mph, but once it hit within 1/8 inch of the red, I'd need to drive about 6 miles at 60 mph to get the temp to drop to the 10 o'clock position. Replacement of the radiator was curative. I bought the Nissen radiator from eeuroparts.com, and they make the same type of radiator for both auto and manual tranny cars, meaning that the tranny coolant connections are there. If you want to pay 20 bucks more and have a manual tranny, you might get the other radiator. Best of luck.
