In thinking about it a little bit longer, BobS's switch is not what you need for this application. As far as I know, all 9000s have two coolant temperature sensors, one for the temp gauge and one for the ECU - these vary by year. I would think that you could remove the two sensors from your 1997 and reuse them in the transplanted engine, or buy some new ones.
Another idea: in a recent post on transplanting engines, Anders (Swedecar) stated that what he likes to do is swap the original intake manifold onto the "new" engine, that way there is no guesswork with the electrical, vacuum or throttle connections. The price for this is extra time and and the intake manifold gasket (cheap).
