ECU will adapt to driving style

Yes, the Trionic system will adapt/adjust to your spirited style of driving; however, it usually takes a little longer than one trip unless you were performing an adaptation run.
An adaptation run involves resetting the ECU (disconnect battery or pull fuse for engine control -- needs to be out for a few hours, then reconnect battery or reinsert fuse), and then driving the car at full throttle/max boost and maintaining this power for 4 seconds at the required rpm range specific to tranny type (auto = 3700 - 4250, stick = search archives). Of course this is best performed going up a steep hill while in 3rd since you do not want the kickdown feature to occur (if auto).
A couple of things could be swaying the results of your findings:
Same fuel octane in both cars?
Same tranny's?
Both at same maintenance level (ie.: correctly gapped plugs)?
Any differences in these items will alter the performance of the car. There are also other things to consider, but these are a start.
The fact that your '95 has the JT will increase power by approx. 5 - 6hp, maybe even more. It can definitely be noticed (I did when I installed mine).
Continue driving her car in the manner you do to get it adapted to a higher-level of performance, or just perform the adaptation run. You'd be surprised how much better the car might perform.
BTW: if her car is a '98 stick (Aero turbo), then the boost gauge should be hitting mid-red (if not end-red) when max-boosting (16 psi). A CSE or '98 auto (CSE turbo) will only hit beginning-red when max-boosting (12 psi).
