Time to find another repair shop! You can buy the oxygen sensor specific to your car for around $125 from some of the site sponsors, and it's probably less than $250 even at the SAAB dealer. Maybe an hour maximum to install it at a shop at whatever their going rate is.
If you want to be adventurous, you can buy a Bosch generic oxygen sensor for less than $50 and splice it in yourself - most shops will not do this.
If you run your car without an oxygen sensor, chances are it will run too rich, wasting gas and destroying your catalytic convertor.
