If you have trouble getting into gears and get occaisonal grinding on shifts, the syncros could be worn. I have some very cold temps up here in Alaska, and I never get pop outs that don't happen irrespective of tranny oil temp (I have a bad 2nd gear syncro), so I'm skeptical of that.
If all the motor mounts are fresh, then have you checked your shifter alignment? The Haynes manual provides a procedure for that.
If no dice there, someone posted a success story last year after using Auto-Rx in their tranny to solve a "pop out" in fifth. I tried it too for my whining 5-speed, and it seemed to have reduced the noise quite a bit (it's a subjective measure), but no effect on the worn syncros of course.
I hope it's something simple like this, as the more expensive options get ugly quickly. Best of luck.
