I asked this question long ago and didn't get any great results, because I don't think many have done it. There are online sites that sell dye for the type of application you want.
It seems to me the problem would be colorfastness. You're basically limited to spraying the dye on, and what's to keep it from coming off? I had visions of taking my wife out in a nice white dress, and...needless to say, I gave up the idea of dying my front seats.
I did use black spray paint on the rear tray of my '97 9K with good results. The fabric is almost totally non absorbant, so I can't imagine any dye staying on too well.
You might ask the same question on the detailing board.
Good luck. If you do it, make sure your wife/girlfriend's dress matches the interior color of your car...
