When you open the throttle, more air comes in. If the car doesn't recognize that more air is coming in, it doesn't add fuel. The mixture leans out and the car dies.
My first guess is that your Air Mass Meter has died or been disconnected. Of course, make sure that the hoses between the throttle body and the AMM are in good shape. A big hole there would cause a similar problem.
The next assumption would be lack of fuel flow or pressure. You need more fuel when the engine accelerates, and if you have a blockage in the fuel filter, you can get plenty of fuel pressure, just no fuel flow. Put another way, the fuel pressure drops when you start taking fuel out of the system. The test for that would be to measure both fuel pressure and fuel delivery.
