Make sure you check the oil level when the engine is cool and the car is parked on a level surface. If you're not doing this, then you are getting incorrect oil level readings.
Being "what appears to be" a quart over the MAX is way too much. A little over the MAX is okay (and some engines actually like it--it's a personal thing!), but that sounds like they're just dumping in the required 5 quarts without stopping at 4 quarts and then checking the level. When I've done my oil changes, the engine usually takes approx. 4.5 quarts. Sometimes more, sometimes less. All depends on how much was left in the oil pan that couldn't/wouldn't drain out. They might be thinking that the rest of it will fill up in the oil filter, but that holds maybe 1/3-quart of oil. Very strange that it's happened so many times to you at different places.
Any chance you can do the changes yourself? Would be a cost-savings to you, as well as you could see where they're going wrong when filling it up.
