This may not be the problem, but it is easy to check. Make sure that the engine is electrically connected to the chassis. There is a ground wire from the engine block to the chassis, by the upper engine mount. With the engine running, measure the voltage between the engine block and the chassis ground. It should be less than 0.05 volts.
Also check the grounding of the ECU.
All I can think of is if the engine ground is bad, the coolant sensor is providing the ground return for the ECU to the engine. Not likely, but an easy and quick check.
