The low coolant indication (Check Radiator) should come on when the switch is closed, which is if the two wires from the switch are connected together. The switch goes to the EDU, and the other side to ground. If the ground is bad, it doesn't matter what the switch does, so check the ground. I'm not sure of the logic on the Check radiator switch - it doesn't go directly to a light, but instead runs through the processor in the EDU.
The check radiator light is nice, but nothing beats a quick peek under the hood at least once a week.
You must put some faith in the coolant temperature sensor - or at least, make sure it's working. That sensor is what is used to turn the radiator fan on and off. So make sure it's working.
Frankly, if I wanted to add extra instrumentation, I wouldn't look at adding more to the coolant. Instead, I'd go after the oil. Oil issues will kill you faster. I would look into replacing the existing oil pressure idiot light with a combination oil pressure/oil temperature gauge. It would require a little fancy plumbing, to bring a short line out of the area on the block to a sensor. I doubt they make one that would fit (it's tight for the existing switch), but that would be worth it.
