There is nothing anybody can do to "straighten" a warped head; just machining the surface. Which, along with a new headgasket would ensure a fit with the block. Beyond which:
1. One needs to make sure that the valves do seat well, I suppose that Ambacadero did that too. Nevertheless, a compression test is in order.
2. The turbo charger bearing is also cooled by coolant, so that needs to be checked out.
3. Since the DI cassette had been melted, the temperature must have been fairly high; you should examine all the seals (there are a whole lot), hoses, vacuum lines, etc. that come into contact with the head and engine block.
4. Check if the heater is working or leaking. Saab 9000's heater core do develop leaks and due to its location, the labor cost on repairing or replacing the heater core is pretty high.
Call Ambacadero for other work they believe the car needs and get an estimate from them. Since you are their potential customer in the future, I believe that they would play a neutral role, not hiding anything for the seller's sake; even though they do have an established relationship with the seller.
