One of two things come to mind-
After 10 minutes or so when the AC stops blowing cold, look at the compressor. Is the clutch still pulling in? You can tell because with the clutch out, the inside of the compressor pulley doesn't spin. When the clutch engages, the center of the pulley spins.
If after about 10 minutes the center pulley isn't spinning (clutch not engaging), I immediately suspect the AC relay. The relay contacts take a real beating because the clutch (and AC fan) is a BIG load. The contacts get carboned up. When you first start the car, the contacts are cool and can pass the current necessary to pull in the clutch (it takes more current to pull in the clutch than to hold it). But that current through the crudded-up contacts produces heat, and that heat increases the resistance of the contacts. Eventually the resistance is enough that the clutch doesn't get enough current to pull in. But the relay is still closed, so just enough current flows to keep the contacts hot.
Shims are the other option. But if the clutch isn't pulling in, I'd suspect the relay.
