Assuming we are talking about r134 refrigerant, this is my politically and (slightly) mechanically incorrect method.
First, you will need to buy a can of refrigerant with the re-usable installation hose that has a guage, available at all discount auto supply stores.
The idea is to get the minimum amount of refrigerant in there so the A/C runs cold, but not too much refrigerant that it strains the engine. More refrigerant than necessary doesn't really increase efficiency much. I do this by bleeding the system down till I can feel the A/C not cooling as well then charging it back up until it just cools.
Get the car up to temp. Turn off the car, connect the hose (fitting can only fits on the low side). Turn the car on and with the A/C on, check the pressure.
You can bleed at either port but I bleed at the highside port. The highside port is the other port on the compressor. It has a schraeder valve, like the valve on a car tire. With the motor off, let out some refigerant by pushing on the valve with a blunt instrument. Start the car and run the A/C and check the temp of the A/C coming out of the vents. Repeat the bleed and check routine until the temp of the air coming out starts to feel noticeably warmer.
Now start the car, run the A/C and little by little, put refrigerant back into the system until it just starts to get cool again. Check the pressure guage. This is you target pressure for future charging.
